The Chef

Chef Gault was born and raised in Greenville, MS where he developed a love for cooking while creating dishes in his childhood home at an early age. Will landed his first job in the restaurant business in 1994 as a Dishwasher and Kitchen Manager at Proud Larry’s in Oxford, MS. A few years later while he was living in Starkville, Will became the Sous Chef at Peter O Patrick’s and was the morning baker at City Bagel Café. In 2003, Will returned to the Mississippi Delta with the opportunity to work at Giardina’s Restaurant in Greenwood, first as Pastry Chef, then Sous Chef, and then became the Executive Chef. In 2008, Will opened Vince’s Restaurant in Leland as Owner and Executive Chef. He enjoyed eight years of creating and serving dishes native to the Mississippi Delta and was especially grateful to the many Cleveland residents who frequented his restaurant. After closing Vince’s in the summer of 2017, Will worked with other restaurant owners in the Delta as a consultant and kitchen manager including Sherman’s in Greenville, South Main Deli in Greenville, and Country Barn Restaurant in Carrolton. Will’s primary interests in the culinary world, thus his offerings, include local farm to table creations, fresh fish from the Gulf, and dishes seasoned with Louisiana Cajun Spices.
